Banana, coconut and raspberry Bread

More bananas, less sugar. 
I cut this into slices and frozen it.

Ingredients

  • 1/3 cup sunflower  or olive oil 
  • 1/3 cup brown sugar
  • 2 eggs
  • 4-5 mashed ripe banana
  • Few drops vanilla essence 
  • 1 cup plain wholemeal flour 
  • 1 cup self raising flour 
  • 1 teaspoon bicarbonate of soda
  • 3/4 cup desicated coconut 
  • 1/2 cup lite sour cream 
  • 1 cup frozen raspberries 

Method

  1. Preheat oven to 180C and grease and line a loaf tin
  2. Mix sugar, oil, bananas, eggs and vanilla together
  3. Add in dry ingredients (flours, bicarb)
  4. Mix in sour cream
  5. Stir until combined (but not over mixed)
  6. Mix in frozen raspberries 
  7. Spoon into tin 
  8. Sprinkle with extra coconut 
  9. Bake in oven for about 45 minutes. Test with a skewer or butter knife (inserted into centre of bread)


Try

substituting sugar with dried fruit (sultanas or cranberries)
