Bruschetta

Ingredients
- 1 wholemeal bread stick
- 3 tomatoes
- 10-12 basil leaves
- 3 cloves of garlic
- Extra virgin olive oil
- Salt and pepper to taste
Method
- Fill a medium bowl with hot water and let tomatoes sit in it for 2 mins.
- Carefully remove tomatoes from water and peel off the skin
- Roughly dice tomatoes and place in a bowl
- Tear basil leaves into smaller pieces and add to tomato. Add salt and pepper to taste then mix together
- Slice bread stick into into circular slices
- Place slices on a baking tray and toast in the oven for 10mins or until crunchy, allow to cool slightly
- Smash the garlic and rub on one side of each toasted slice of bread
- Top with tomato and basil mixture, and drizzle with extra virgin olive oil
