Veggie Slice

We love frittata and when I combined my recipe for frittata with my zucchini slice recipe we got a dinner that my 6 year old described as "superb".
Perfect as dinner, a side or a picnic lunch! Leftovers are great for school or work lunchboxes.
Ingredients
- 1 onion
- handful of mushrooms
- 100g bacon or ham (try natural, nitrate-free ham)
- 1 teaspoons olive oil
- 3 carrots
- 1 large zucchini
- 3 carrots
- 420g can of creamed corn (or drained corn)
- 1 1/4 cup corn flour (or plain flour)
- 3/4 cheese (I use 1/2 light tasty and 1/2 Parmesan)

Method
- Preheat oven to 180 degrees Celsius
- Dice onion, mushrooms and ham/bacon
- Heat oil in a fry pan and cook onions on medium heat for two minutes
- Add mushrooms and bacon and cook for three to four minutes, leave to cool
- Great zucchini and carrots
- Combine all ingredients in a large mixing bowl
- Transfer mixture to oven proof baking dish
- Cook for about 40-45 minutes
