Veggie Slice

We love frittata and when I combined my recipe for frittata with my zucchini slice recipe we got a dinner that my 6 year old described as "superb". 

Perfect as dinner, a side or a picnic lunch! Leftovers are great for school or work lunchboxes.

Ingredients

- 1 onion
- handful of mushrooms
- 100g bacon or ham (try natural, nitrate-free ham)
- 1 teaspoons olive oil
- 3 carrots
- 1 large zucchini

- 3 carrots
-
420g can of creamed corn (or drained corn)
- 1 1/4 cup corn flour (or plain flour)
- 3/4 cheese (I use 1/2 light tasty and 1/2 Parmesan)


Method

  1. Preheat oven to 180 degrees Celsius
  2. Dice onion, mushrooms and ham/bacon
  3. Heat oil in a fry pan and cook onions on medium heat for two minutes
  4. Add mushrooms and bacon and cook for three to four minutes, leave to cool
  5. Great zucchini and carrots
  6. Combine all ingredients in a large mixing bowl
  7. Transfer mixture to oven proof baking dish
  8. Cook for about 40-45 minutes

Try adding any veggie you like to this recipe
