Fried Rice

Ingredients

  • 1 cup of brown rice, cooked and cooled 
  • 2 eggs
  • 2 teaspoons sunflower or canola oil 
  • 1 spring onion, sliced 
  • 2 rashers of bacon, chopped 
  • 3/4 cup of peas
  • 1 carrot, finely diced
  • 1 can of corn, drained
  • 1 tablespoon of soy sauce

Method

  1. Crack eggs into a small bowl and whisk together
  2. Heat oil in a frying pan over medium heat
  3. Pour in eggs so they cover the whole pan, forming an omelette.  Cook for 2 minutes, flip, and cook for 2 minutes on the other side, then remove from fry pan
  4. Slice omelette into thin strips
  5. Add bacon to pan, and cook for approx. 4 minutes until light golden
  6. Next add in all the vegetables and stir fry until carrots are soft
  7. Stir in the rice and soy sauce and cook until heated though
