Fried Rice

Ingredients
- 1 cup of brown rice, cooked and cooled
- 2 eggs
- 2 teaspoons sunflower or canola oil
- 1 spring onion, sliced
- 2 rashers of bacon, chopped
- 3/4 cup of peas
- 1 carrot, finely diced
- 1 can of corn, drained
- 1 tablespoon of soy sauce
Method
- Crack eggs into a small bowl and whisk together
- Heat oil in a frying pan over medium heat
- Pour in eggs so they cover the whole pan, forming an omelette. Cook for 2 minutes, flip, and cook for 2 minutes on the other side, then remove from fry pan
- Slice omelette into thin strips
- Add bacon to pan, and cook for approx. 4 minutes until light golden
- Next add in all the vegetables and stir fry until carrots are soft
- Stir in the rice and soy sauce and cook until heated though
