Fruit Pancakes

My kids love these for breakfast on their birthdays. Also a fun after-school snack with friends.
Ingredients
- 1 egg
- 1 cup self raising flour (I use wholemeal)
- 1 cup milk (I use reduced fat)
- choice of fruit. Strawberries, banana and walnut, frozen blueberries
- Oil
Method
1. Whisk together eggs, milk and flour
2. Cut fruit into slices (if required)
3. On medium heat, heat a little oil in a fry pan (you can use a pastry brush to spread oil)
4. Spoon pancake mixture into pan
5. Top with fruit of your choice
6. When batter starts to bubble, flip pancake
7. Cook on other side for a few minutes
8. Repeat with remaining mixture, adding a little oil to pan before each pancake
My kids eat these plain (without syrup or sugar) as the fruit sweetens them.
Variation - for a fun lunch make with grated cheese in place of fruit.
