Sesame Crumbed Fish with Nectarine Relish
serves 4
Ingredients
- 600g white fish fillets
- 3 Tbs plain flour
- 1 Tbs milk
- 1 large egg
- 1 ½ cups multigrain breadcrumbs
- ¼ cup sesame seeds
- 1 Tbs olive oil
- 3-4 ripe (or over ripe) nectarines*
- 2 Tbs balsamic vinegar
Method
1. To make relish, cut nectarines in cubes. In a pot add nectarines and balsamic vinegar and stir. Cook on low-medium heat for 15 minutes or until nectarines are soft, stirring occasionally.
2. In a shallow dish, whisk egg and milk together.
3. In another dish, mix breadcrumbs and sesame seeds.
4. Coat fish in flour then coat in the egg mixture then dip in breadcrumbs.
5. Heat oil in pan over medium to high heat. Reduce heat to medium and add fish. Cook fish for 3-4 minutes each side or until cooked through.
6. Serve with nectarine relish.
7. Add grains (homemade chips or rice) and veggies (salad or stir-fried greens)
* When nectarines are not in season use apple or pear instead
