Ingredients
- 1 cup brown rice, cooked
- 2 celery stalks
- 1 small red capsicum
- 2 green onion
- 1 carrot
- handful of olives
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
Method
- Finely chop celery, red capsicum, spring onions.
- Finely dice the carrot
- Halve the olives
- Put all vegetables into salad bowl, stir in the cooked rice
- Combine olive oil and lemon juice in a small bowl and pour over rice mixture and toss salad
