Salmon Patties

I have to be honest, these are not a favourite with everyone in my house although  me and my 2 year old daughter love them.  I keep making them every so often to try and convince the others. 

Try them and tell me what you think. 

Makes about 20 small patties 

Ingredients


- 1 large sweet potato 
- 415g tinned salmon, drained
- 3 Tbs diced fresh coriander 
- 2 Tbs sweet soy sauce (ketup manis)
- 1 egg 
- 1/2 cup breadcrumbs 
- 1/2 - 3/4 cup extra breadcrumbs 
- 2-4 teaspoons oil 

Dipping sauce: 
- 3/4 cup Greek yogurt
- 2 teaspoons sweet chili sauce 

Method
    1. Peel and chop sweet potatoes. Steam until soft. 
    2. Mash sweet potato and allow to cool 
    3. Combine sweet potato, salmon, coriander, sweet soy, egg and 1/2 cup breadcrumbs
    4. Roll into patties and roll in extra breadcrumbs 
    5. Heat 2 teaspoons of oil in pan on medium heat
    6. Fry patties for 4-5 minutes each side until golden brown
    7. Repeat with remaining oil and patties 
    8. Serve with dipping sauce. To make dipping sauce: combine yogurt and sweet chili sauce 


    Note: You can make homemade breadcrumbs by toasting bread. Place toasted bread in food processor and blitz until fine bread crumbs. 1 slice of toast makes about 1/2 cup breadcrumbs
